Easy Meatball Subs

We like to eat ours open-face style.

With the temperature reaching triple digit heat indexes this week, I have been cooking easy meals that don’t require the stove or heating up our Camper Cottage.

One of our favorite meals is crockpot meatballs that we turn into meatball subs. Y’all these are so easy and so tasty!

While I realize these are far from homemade, it’s what works for our family. There used to be a show on Food Network called Semi-Homemade with Sandra Lee and it’s honestly how I view my cooking style. Things don’t have to be complicated to be good.

It should be noted that I measure all the things with my heart so there aren’t actual measurements included in this recipe. Do what ever feels right for you.

What you’ll need:

Sub Rolls

Provolone Cheese Slices

Frozen Meatballs (I used about half of the 6lb bag.)

2 Jars of your favorite Marinara Sauce

Grated Parmesan Cheese (I did a nice coating over the top.)

Garlic salt and pepper to taste

Add the meatballs, marinara sauces and Parmesan cheese to a crockpot. Add a little garlic salt and pepper. Stir well and cook on low for 4-6 hours.

When you’re ready to serve, cut open the sub rolls and place your provolone cheese slices inside. Melt your cheese. (You can warm these in the oven for a few minutes or the microwave for a few seconds.) Then add in your meatballs and sauce.
